Unlike in Western cooking where a saucepan is primarily for simmering sauces, in Pakistan, a saucepan (often called a deghchi or pateeli when slightly deeper, or simply a saucepan) is the daily workhorse used for:

  1. Chai (Tea) Preparation: This is arguably its most frequent and important use. The tall sides and long handle are perfect for boiling milk, adding tea leaves and sugar, and vigorously mixing the traditional Pakistani milky chai.

  2. Boiling Liquids: Water, milk, or stock for smaller recipes.

  3. Warming/Reheating: Quickly heating leftovers, curries (salan), or small quantities of daal (lentils) or sabzi (vegetables).

  4. Preparing Small Batches of Sides: Cooking small amounts of rice, vermicelli (seviyan), or custards/kheer.

  5. Making Gravies and Sauces: For individual or quick dishes that don't require the width of a karahi or large pateela.
